sweet potato fudgy brownie
ingredients
1 1/2 cups oat flour
1/2 cup cocoa powder
1 tsp salt ( plus more for sweet potatoes )
1 tsp baking powder
2 medium sweet potatoes
2 tbsp coconut oil
1 tbsp olive oil
1/4 cup sugar
1/4 cup maple syrup
1/3 cup milk or choice
Chocolate chips
Walnut pieces
step by step
Preheat oven to 400F.
Wash, pat dry, and place your sweet potatoes into a baking dish, then pour olive oil over the potatoes and sprinkle a couple good pinches of salt.
Rub the salt and oil into the potatoes with your hands and place in the oven until completely tender ( poke them at the 35 minute mark to check them )
In a large bowl combine oat flour, cocoa powder, salt, and baking powder and whisk it all together.
Once the sweet potatoes are done, take the skins and ends off, and discard ( or enjoy the skins as a snack! )
Mash the sweet potatoes, and add sugar, maple syrup, coconut oil and milk of choice.
Mix the wet into the dry thoroughly.
Decrease the oven temperature to 325F.
Oil a 5x9” baking dish with coconut oil, place your batter in it, spread it out evenly and smother as much chocolate chips and walnuts as you desire on top.
Place in the oven and bake for 35-40 minutes.
Allow to cool for about 25 minutes before you cut into them ( they will stiffen up a bit more as they cool, so if they are extra gooey while warm, don’t worry! )
