herby pesto cauliflower
ingredients
1 head cauliflower
pesto
2 cups basil packed
2 small sprigs thyme
1/4 sprig rosemary
2 sage leaves
1/4 cup + 1/2 tbsp olive oil
1 tsp + 1 tbsp salt
1 tsp black pepper
2 tbsp white balsamic vinegar
1/4 lemon
step by step
Boil a large pot of water and add about 1 tbsp worth of salt to it ( do this in a pot that you can have on the stove and put in the oven )
Using a paring knife cut the leaves and main stalk from the cauliflower, however be careful not to detach the florets from each other. You want to leave a bit of stalk to hold them together.
Carefully place the whole cauliflower into the pot of boiling water, covering with a lid, boil for 5-8 minutes ( smaller cauliflowers do 5 minutes, large ones go for 8 )
In the meantime make your pesto. Add all the ingredients to the blender or food processor and combine until all the herbs are broken down, but is not too pasty.
Drain your cauliflower and let the cauliflower cool for several minutes.
Add 1/2 tbsp olive oil into your hands and rub on the outside of the cauliflower. Pour 80-90% of the pesto over the cauliflower, and bake in the oven for 20-25 minutes.
Using a couple spatulas, flip the cauliflower over and brush the remaining pesto on top. Place back into the oven for 10-15 minutes ( feel free to put your oven on broil for a couple minutes to brown the top )
Serve and enjoy what I’d ‘caul’ the tastiest herby cauliflower around!
