lazy apple “pie”

ingredients

3-4 large apples

2-3 tbsp vegan butter or coconut oil

1/2 cup sugar

1 tsp cinnamon

1/2 tsp nutmeg

pinch of clove

pinch of salt

1 puff pastry dough

step by step

  1. Peel core and chop your apples into slices ( mine were cut into 8ths )

  2. Line your cast iron pan with vegan butter and line your apples.

  3. Cover with sugar, cinnamon, nutmeg, clove and salt, and bake for 15 minutes.

  4. Roll out your puff pastry dough ( follow packaging instructions )

  5. Remove the apples and drain out any extra liquid if necessary ( you can save if to drizzle on top later! )

  6. Cover with dough and use your hands to light press it into the apples and around the sides.

  7. Bake until golden brown and flaky ( follow packaging instructions )

  8. allow “pie” to cool until you can handle it. You then can try to flip it out of the pan on to a plate so the apples are facing up, but you can also dig in as is!

  9. Enjoy with ice cream or coconut yogurt and remember that it is in ‘pie’ we ‘crust’.
