ingredients

Base:

1 3/4 cups oats

1/2 cup almond meal

3tbsp maple syrup

2 tbsp coconut sugar

1 1/2 tbsp coconut oil

3 tbsp peanut butter

1 tsp cinnamon

1/4 tsp salt

Other:

1 1/4 cup dates

1/3 cup chocolate chips

1/2 tbsp coconut oil

1 tsp vanilla

step by step

  1. Preheat oven to 350F. In a large bowl combine oats, almond meal, cinnamon and coconut sugar. Melt coconut oil and add it to the dry ingredients along with all the other ingredients.

  2. Line a small baking pan with parchment paper. Add 3/4 of the base mixture to the pan, using a spoon to press and shape it to the pan. You don’t need to press extremely hard but enough to shape and flatten it evenly! Place into the oven and bake for 20-25 minutes.

  3. In a small pot, add water up to approximately 1 - 2 inches and bring to a simmer. Add your pitted dates and simmer them for about 10 minutes. Drain the dates and add them to your blender, along with 1tsp vanilla extract. Blend until smooth.

  4. Take out the bake and spread your date mixture overtop. Top it with the rest of your base mixture. Place it back in the oven for 20 minutes.

  5. Take it out of your baking sheet and allow to cool for 30 - 40 minutes. Close to that time mark, you can start to melt your chocolate with coconut. You can do this in the microwave or on the stove top.

  6. Drizzle your melted chocolate over your date squares and place it in the fridge to cool completely. Cut them up, store them in a sealed container in the fridge and enjoy!
