cashew cream & blueberry compote on sourdough

ingredients

creamy sauce:

1/2 cup raw, unsalted cashews

1/4 cup hemp seeds

2 tbsp apple cider

1/4 cup plain yogurt

2 tbsp water

1/2 tsp salt

berry compote

2/3 cup frozen blue berries

2 tsp chia seed

garnish

agave

fresh basil

step by step

  1. Combine cashews, hemp seeds, apple cider vinegar, yogurt, salt, and water in a blender and blend until smooth.

  2. Put the frozen blueberries in a bowl and into the microwave for a minute and 30 seconds, or until the berries are completely thawed and melty.

  3. Mix the chia seeds and the blueberries together and leave them to sit for a few minutes,

  4. Toast your bread.

  5. Spread the cashew cream on the toast and then add the berry compote.

  6. Drizzle with agave and sprinkle fresh basil ribbons on top.

  7. Enjoy your ‘berry’ delicious toasted treat!
