protein blueberry pancakes

ingredients

2 cups oat flour ( or blend 2 cups of oats until fine )

1 tsp baking powder

1 scoop protein powder

good pinch salt

1 cup cashew milk

1 cup water

1 tbsp apple cider vinegar

1/3 cup crushed or sliced almonds

1 1/2 cups frozen blueberries

step by step

  1. Combine the oat flour, baking powder, protein powder, and salt in a bowl.

  2. Add in the cashew milk, water, and apple cider vinegar and mix well.

  3. Chop / smash the almonds and add them to the batter, along with the frozen blueberries. Fold them in.

  4. Heat up oil in a pan and scoop the batter onto the pan in a circular shape.

  5. Flip the pancake once the underside has browned and let it brown on the other side as well.

  6. Top with syrup, honey, cream, more berries, a protein powder and yogurt mixture… Whatever you desire.

  7. Enjoy and remember: Life is always ‘batter’ with pancakes!
