herby green bread soup

ingredients

1/2 block of vegetable stock

1 cup of coriander ( loosely packed )

1/2 cup parsley ( loosely packed )

1 cup basil ( loosely packed )

1 tsp salt

1/2 block of soft or medium tofu

1 slice of sourdough bread

1 tbsp olive oil

splash of white balsamic ( sub for lemon juice )

chilli flakes to taste

step by step

  1. Heat the vegetable stock in a pot.

  2. Slice up your tofu.

  3. Heat olive oil in a pan on medium heat. Once the oil is hot, add your sliced up tofu.

  4. Add tofu to the hot pan, season with 1/2 tsp salt, and brown it on both sides.

  5. In a mortar and pestle, add your fresh herbs and 1/2 tsp salt ( You can also do this in your food processor )

  6. Slice up your bread.

  7. In a bowl, assemble 2 tbsp of your herb mixture with all other elements and drizzle with olive oil, white balsamic and chilli flakes.

  8. Enjoy a herby green soup that’ll knock your ‘stalks’ off!
