ingredients

2 tbsp light oil 

4 tbsp soya sauce 

2 tbsp sugar ( light brown sugar is yummy but any sugar works! ) 

2-3 servings of Rice noodles ( thicker ones are better ) 

4 king oyster mushrooms ( optional ) 

1 large punch of choy sum ( sub for chinese broccoli or 3-4 baby bok choy )

1/4 small green cabbage 

1/2 medium sized cooking onion

4-6 cloves garlic 

1 block firm tofu 

1 small red thai chilli ( optional )

step by step

  1. Place your rice noodles in a large bowl, cover them in hot water, then place a plate or lid on top and set aside.

  2. Mix soya sauce and sugar together ( the sugar might not dissolve )

  3. Slice your block of tofu as seen in the video, add one tbsp of the sauce to the tofu, and set aside.

  4. Slice your oyster mushrooms length wise ( optional - you can cut them in whatever fashion you desire ) 

  5. Dice your onion, chop your greens, dice your cabbage, mince your garlic and chop your chilli.

  6. Heat a large pan on medium heat, add 1 tbsp of oil and cook tofu on both sides until golden brown, and then remove from the pan.

  7. In the same pan put the last tbsp of oil along with the mushrooms, onion and garlic, keep this moving in the pan so the garlic doesn't burn! After a minute season with 1 tbsp of the sauce and cook for 1 more minute until adding the greens and cabbage. cook until the greens have softened but still have a crunch to them ( about 7-9 min ) adding the chilli mid way through.

  8. Strain your noodles.

  9. Add your noodles and tofu back to the pan along with the rest of your sauce ( feel free to add a touch more soya sauce if needed! )

  10. Mix together really well, serve, and enjoy the noods!
